In a mixing glass, muddle 3 barspoons of diced green apples with 1/2 oz fresh lemon juice. Add 3/4 oz honey syrup*, 1 3/4 oz North Shore Distillery Aquavit and ice.
Shake hard and double strain into a chilled cocktail glass. Garnish with a small sage sprig or leaf.
Two parts honey to one part water. Bring water to a boil and stir in honey until incorporated. Do not reduce. Remove from heat and let cool.
