🎓 Agave Academy

Tequila vs. Mezcal: What’s the Difference?

Both are distilled from agave, but where they’re made, which agave they use, and how they’re produced create two distinctly different spirits.

TEQUILA
  • Produced primarily in Jalisco and a few designated regions
  • Made from Blue Weber agave, with 100% agave expressions using only Blue Weber
  • Typically bright, citrusy, herbal, peppery, and agave-forward
  • Agave is generally steam-cooked, creating a clean, fresh profile

MEZCAL
  • Produced across several Mexican states, with Oaxaca being the most famous
  • Can be made from dozens of agave varieties
  • Traditionally roasted in underground pit ovens

🥃 Oro de Oaxaca

Nearly a Century of Mezcal Tradition

Oro de Oaxaca traces its roots to 1940, when Don José López Escobar began distilling mezcal in Santiago Matatlán, Oaxaca, the “World Capital of Mezcal.”

Today, the tradition continues with 100% Espadín agave, slowly roasted in underground stone pits, crushed with a traditional tahona, naturally fermented in open wooden vats, and double-distilled in copper pot stills.

The result is classic Oaxacan mezcal: roasted agave, gentle smoke, mineral complexity, and a long savory finish.

Look for the traditional gusano and sal de gusano, a nod to mezcal’s cultural heritage.


🌙 Sueño de Alden

A Fifth-Generation Mezcalero

Sueño de Alden brings generations of knowledge to a modern artisanal mezcal.

At the heart of the brand is Pedrito Martinez Jimenez, “Don Pedro,” a fifth-generation master mezcalero from Santiago Matatlán.

Made from mature Espadín agave harvested after 7-10 years, the piñas are roasted in underground earth ovens for up to five days, crushed with a horse-drawn tahona, naturally fermented, and double-distilled in copper alembic stills.

The result: gentle smoke, fresh herbs, citrus, and earthy minerality.


✨Cava de Oro

Three Generations of Tequila Craftsmanship

Produced by the Partida family at Tequilera Puerta de Hierro in El Arenal, Jalisco, Cava de Oro represents three generations of tequila-making expertise.

The tequila begins with 100% Blue Weber agave, harvested after 7-10 years from both the highlands of Los Altos and the Tequila Valley. Traditional stone and brick ovens, natural fermentation, and pot still distillation preserve the character of the agave.

From Plata through Extra Añejo and Cristalino, careful oak aging adds layers of vanilla, caramel, baking spice, and toasted oak.


🌿Prolijo

Crafting Spirits. Preserving Tradition.

Founded by Juan Peña, Prolijo works with fourth-generation mezcaleros in Oaxaca and family agave growers in Jalisco and Nayarit.

Traditional production remains at the heart of the brand: pit-roasted agave, volcanic tahonas, wild fermentation, and careful double distillation.

But Prolijo’s mission goes beyond what’s in the bottle. The brand supports reforestation, agave replanting, sustainable agriculture, and local farming communities.


👀Abre Ojos

Open Your Eyes to Tequila

Abre Ojos is produced in partnership with multi-generational families in Jalisco, with a focus on exceptional agave and traditional production.

Made from 100% naturally grown Blue Weber agave, the piñas are hand-selected and roasted in brick ovens for 72 hours. They’re then milled, naturally fermented with native yeasts, and double-distilled in stainless steel pot stills.

The lineup ranges from bright, agave-forward Silver to oak-aged Reposado and Añejo expressions.
