Description
After a soft destemming, the traditional skin-contact maceration begins. It lasts for 10-12 days. This process is followed by the first racking at the end of which the maloactic fermentation starts. The refining last for about 4-5 months and is carried out in stainless steel vats at controlled temperatures. After the bottling, the wine rests for a short period in lay-down bottles inside the cellar, until in reaches a perfect refining.
Bright ruby red with brilliant reflections. Pleasantly vinous with intense scents of cherry and red fruits and a spicy finish. Full and fruity, fresh and generous, it exalts the typical characteristics of the Barbera. Its sweet and soft tannins, lead to a soft and persistent finish. Thanks to its typical structure, it can be appreciated both in the first year after the harvest and after a short aging. Thanks to its extraordinary versatility it can be paired with a wide range of courses. It matches perfectly with hors-d’oeurvres, pasta or meat in general. It can be paired also with fish. During the summer it is excellent if served slightly chilled.
